Perfect picnics end with a sweet treat. These Picnic Perfect Blackberry Lemon Bars are ideal. They’re easy to make, pack well, and are always a hit! It’s the blackberries that make them so special. 

Picnic Perfect Blackberry Lemon Bars

 

Prep Time: Approximately 15 minutes

Cook Time: Approximately 45-50 minutes

Total Time: Approximately 1 hour and 5 minutes

 

Ingredients

1 cup all-purpose flour
1/2 cup unsalted butter, softened
1/4 cup powdered sugar
2 large eggs
3/4 cup granulated sugar
2 tablespoons all-purpose flour
1/4 teaspoon baking powder
2 tablespoons lemon juice
Zest of 1 lemon
1 cup fresh blackberries
Additional powdered sugar for dusting

Instructions

Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.

In a mixing bowl, combine 1 cup flour, softened butter, and 1/4 cup powdered sugar. Press the mixture evenly into the bottom of the prepared baking pan. Bake for 15-20 minutes, or until lightly golden.

In another bowl, beat eggs until light and fluffy. Add granulated sugar, 2 tablespoons flour, baking powder, lemon juice, and lemon zest. Mix until well combined.

Gently fold in the blackberries. Pour the filling over the baked crust.

Bake for 25-30 minutes, or until the filling is set and lightly golden.

Allow the Picnic Perfect Blackberry Lemon Bars to cool completely in the pan. Once cooled, dust with powdered sugar and cut into squares. Serve chilled or at room temperature.
